Hello and welcome to I Eat Healthy. My name is Jim and I am a "Starchivore" What is that you ask? Check out the link to Dr. McDougall's website below and find out. My story began several years ago after having suffered from a long battle with hypertension, high cholesterol, and a slight weight problem. That combined with a family history of heart disease, cancer, and diabetes left me frustrated with "modern" medicine. By "modern" medicine I mean the philosophy that everything can be solved with a pill. Unfortunately, as most people find out, many of the medications we take do not solve the problem, they only treat a symptom. To add further insult many of the medications we take on a daily basis have side effects. And yes, those side effects need to be treated. And you guessed it - another pill! This is not the way Mother Nature intended us to live.
My path to redemption started when a co-worker told me about a book called "The China Study" by T. Colin Campbell, PhD. Reading that book made me realize that I had a very poor understanding of nutrition and that I needed to take control of my own destiny. It also made me hunger for more information about nutrition. Soon after reading Dr. Campbell's book I came across a video called "Forks Over Knives". Much like Campbell's book the video examines the profound claim that most, if not all, of the degenerative diseases that afflict us can be controlled, or even reversed, by rejecting animal-based and processed foods. I highly recommend you watch this video. From there I found many sources that used nutrition as the means for optimal health and to combat disease. I'm not telling you to throw out your medications and stop seeing your doctor. I'm saying you need to understand nutrition such that you can take control of your life as I and many other people have done. I no longer take blood pressure and cholesterol medication and nor do I worry about my weight. My diet and lifestyle take care of it for me.
Hippocrates once said, "Let food be thy medicine and let medicine be thy food". This is my motto!
